2 cups Coconut ribbons
2.5ish T Coconut oil
2.5 cups Pecans
1/4 t (or to taste) Pink Himalayan salt
1.5 cups Dates
Cinnamon (to taste)
1/4 t Vanilla
Add coconut ribbons and pecans to food processor. Blend into evenly chopped fairly small pieces.
Add pink Himalayan salt and cinnamon. Blend to disperse throughout.
Add dates. HOLD down the top of the food processor!! (No joke, it will rumble like it’s about to blast off to outer-space). Blend until all dates are chopped small, the consistency of the mix should thicken and begin to stick together.
Add vanilla, blend again…
Melt the coconut oil in a pan, then add it to the mix in the food processor. Blend one last time, increasing the thickness of the mix.
Taste it! Add some more cinnamon, salt, vanilla, or whatever you feel it needs.
Squish the mix into round bite size balls and refrigerate.
